Hate the word detox… but appropriate for this little snack I’ve been eating lately – avocado and berry detox salad.
And that’s okay! But I thought I’d share one of my favorite breakfasts and snacks as of late.
You pretty much have to love avocado to like this recipe. If avocado isn’t your thing… move on. I can’t think of a substitute that would work here.
So in my research, I’ve found that flax and lemon are two foods that are great for someone who’s having allergy or gut issues. And apple cider vinegar but I’ll save that for another day.
Seriously – just google flax and you’ll find tons of goood information about how awesome it is.
Now – I know there’s been some debate about avocados. They are basically fat, but they are the good fat. They are fantastic for balancing hormones, boosting metabolism and fighting disease, and I LOVE them. I feel like lately I eat at least one avocado per day.
With that in mind and knowing that berries are high in antioxidants, I’ve been making this little fruit salad for breakfasts and snacks lately. I LOVE IT!
I start with leaving the avocado in chunks, but I found that I liked it best with TONS of lemon and a little flax with the consistency of more like guacamole. Feel free to do the chunks if you prefer!
- 1 avocado, peeled and seeded
- 1/4 lemon (about 2 tbs or a little less)
- 1/2 cup berries/fruit (I used blueberries, strawberries and cherries)
- 1 tbs flaxseed meal
- Salt & pepper
- 1 tbs parsley, chopped
- In a small bowl, mix the avocado, flaxseed, lemon, salt, pepper, and parsley, smashing like you would guacamole. Mix until combined to desired consistency. Top with chopped fruit of your choice.
